The HI-98163 uses the FC2323 meat pH electrode to measure the pH and temperature with its stainless steel piercing blade. The HI-98163 is a rugged, waterproof Foodcare portable pH meter.

FC2323 electrode

The FC2323 supplied with the HI-98163 is designed specifically for measuring pH in meat. The electrode has a high abrasion resistance, mechanical strength and resistance to ultraviolet and nuclear radiation. The FC2323 has been designed to include a stainless steel piercing blade around conic tip shape probe for easy penetration. A Polyvinylidene Fluoride (PVDF) food grade plastic body is resistant to most chemicals and solvents, including sodium hypochlorite.

The Hanna unique CAL Check feature alerts the user to potential problems during the calibration process. Which is important for the food processor since it is likely that the probe will be coated with the solids found in the food product being measured. This said coating can easily lead to errors in pH measurement. The meter will inform the user with display prompts when the probe needs to be replaced, cleaned or if the pH buffer might be contaminated. The overall probe condition, after calibration, is displayed on the screen as a percentage from 0 to 100% in increments of 10%. The offset and slope characteristics of the pH electrode can affect the probe condition. Both the offset and slope characteristics can be found in the GLP data.
