Hygiena GlutenTox® Pro

The Hygiena GlutenTox Pro is designed specifically for commercial kitchens and food manufacturers. It is a quick user-friendly gluten detection kit for foods, drinks, and surfaces. These precise kits can provide you with rapid, accurate results without the use of expensive lab equipment. This semi-quantitative tool is to avoid accidental gluten contamination in foods and on surfaces. This kit is recommended for consumers, commercial kitchens and industry and includes the possibility of choosing different detection threshold levels of gluten according to the end-user requirements.

GlutenTox® Pro is an immunochromatographic test (lateral flow test) for the detection of gluten in foods with different composition and levels of processing, from raw materials to processed food. ln addition, GlutenTox® Pro can be used to control the cleanliness of food production zones through surface analysis, a prerequisite to prevent the risk of cross-contamination in the final product.

These rapid tests are specially useful in routine monitoring of gluten to ensure that products comply with a program of Hazard Analysis and Critical Control Points (HACCP), and to ensure proper labeling. They also enable quick decisions and corrective actions in case there is any risk of contamination along the production chain.

Matrices validated according to AOAC Performance Tested Methods (SM) (PTM) protocols:

  • Food matrices: rice, flour, bread, cookies, rolled oat, pate, and yogurt.
  • Environmental surfaces: stainless steel, rubber, plastic, food-grade painted wood, and sealed ceramic

Each AlerTox Sticks Soy kit includes all the basic equipment required to carry out testing:

  • Yellow cap bottle with extraction solution

Other materials not supplied:

  • Mortar or any other utensil to grind the sample

  • Watch (a stopwatch is preferable)

The G12 antibody was raised against the highly immunotoxic 33-mer peptide of the α-gliadin protein that induces celiac disease and recognizes the immunotoxic prolamins from wheat, barley, rye, and some varieties of oat. The G12 is also capable of reacting to other epitomes that are found in other toxic prolamins and can react to similar sequences present in other gliadins outside the 33-mer of the α-gliadin.
